The Grind Size
The grind size is crucial:
- Too fine: The espresso becomes bitter and runs too slowly
- Too coarse: The espresso tastes watery and sour
- Ideal: Like fine sand, extraction time 25-30 seconds
The Perfect Extraction
- Dose: 18-20g ground coffee for a double espresso
- Tamping: Press evenly with consistent pressure
- Temperature: 90-96°C water temperature
- Time: 25-30 seconds for about 40ml espresso
The Result
A perfect espresso has:
- A hazelnut-brown crema
- Sweetness with slight bitterness
- Full texture
- Long, pleasant finish
