The grind size is crucial:

  • Too fine: The espresso becomes bitter and runs too slowly
  • Too coarse: The espresso tastes watery and sour
  • Ideal: Like fine sand, extraction time 25-30 seconds

The Perfect Extraction

  1. Dose: 18-20g ground coffee for a double espresso
  2. Tamping: Press evenly with consistent pressure
  3. Temperature: 90-96°C water temperature
  4. Time: 25-30 seconds for about 40ml espresso

The Result

A perfect espresso has:

  • A hazelnut-brown crema
  • Sweetness with slight bitterness
  • Full texture
