History
Green tea is the ancestor of all teas and looks back on a 5,000-year history. Legend has it that Chinese Emperor Shen Nung discovered tea in 2737 BC when leaves from a wild tea tree fell into his boiling water. Unlike black tea, green tea is not fermented – the leaves are heated directly after harvest by steaming (Japanese method) or pan-firing (Chinese method) to stop oxidation. This preserves the catechins and antioxidants that make green tea so valuable.
